Try this comfort food classic with a slight twist, Spicy Chipotle Mac-n-Cheese!! This pairs extremely well with the oven baked chicken strips in an earlier post. No one will be disappointed with this dinner option.

Warm and gooey, cheesy and spicy simply everything good. Just go for it. You know you want to.

I pkg of elbow macaroni
1 onion, small dice
1/3 cup butter
1/3 cup flour
Sauté the onion in the butter, then whisk in the flour. Cook for about 4-5 minutes. Then slowly whisk in 3 cups of milk, bring it to a simmer, add two whole dried chipotles, whisking constantly. Allow to simmer about 10 minutes, if it gets too thick  thin it out with milk, you want it to be slightly runny due to all the cheese getting added.
Cheese is next
1 cup parm
1 cup cheddar
1 cup chipotle jack
1 cup mozz
Reduce heat and add cheese. Whisk until melted. Allow the mixture to cook on the lowest setting and stir regularly while you boil the pasta. Pasta should be a bit under done.

Add a tsp of chipotle flakes, half of the sauce, to the cooked pasta.  Mix well.
Repeat the amounts of cheese from earlier in a bowl to the side.
Layer it in the pan sauce, then pasta, then cheese, repeat until all is used and finish with cheese. Bake until brown and bubbly 35 mins at 350F
