Valentine’s Day Treat #2: Italian Love Cake

The first few Valentine’s confections are all made to share with a group. Spread the love this year people, and do it with something yummy. Italian Love Cake is basically a “Dump Cake” recipe.

The recipe I found for Italian Love Cake had nothing Italian in it aside from ricotta cheese. What’s up with that?!? So in my version we use marscapone cheese to. Give it the luxurious feel. It lend a little flavor complexity to the dish. I also opted to use the more expensive mixes, we are aiming for “top shelf” quality after all. The cake comes out just as well with store brand or less expensive ingredients, but if your going to go for it; you might as well go the distance.

This is a quick and easy dessert to make and share. It’s the perfect last minute finale to almost any dinner. Captain picky in our house does not care for sprinkles (one more thing to add to the list), which is why part of my cake is left naked. Whether you choose to dress her up or let her go bare, this Italian beauty is sure to be well received by all who dare to take a bite. Once they do they’ll be hooked.

P.S. This also would make a great Game Day treat for a hungry crowd!

Italian Love Cake

1 Box of Chocolate Cake Mix

1 Cup of Ricotta Cheese

1 Cup of Marscapone Cheese

3/4 Cup Granulated Sugar

1 Tsp Vanilla Paste

4 Eggs

1 Package of Chocolate Pudding Mix

1 Cup of Milk

12 oz of Cool Whip

Sprinkles

 

Procedure:

1. Grease a 9×13 glass baking dish. Preheat the oven to 350F
2. Prepare the cake mix according to the package instructions and set aside.
3. Whisk together the cheeses, sugar, and vanilla until smooth. Incorporate the eggs a few at a time, until smooth.
4. Evenly pour the cake batter into the prepared pan. Top the cake layer with the cheese mixture. Place the pan in the oven and bake for 1 hour, or until the cake only has a light jiggle when tapped.
5. Place a second pan of hot water on the lower rack. This will prevent the cake from cracking as it bakes.
6. The finished cake will be golden around the edges and a toothpick inserted into the center will come out clean, some of the cheese layer may stick but the chocolate should be set. Cool the cake completely, you may place it in the fridge to chill for at least an hour.
7. Combine the milk and pudding mix until combined. Fold in the cool whip.
8. Top the cooled cake with the cool whip mixture and chill for another hour.
9. Decorate with sprinkles and enjoy!

For a cute way to package and present this treat, I actually baked half of the batter off in 6oz – 8oz tall Mason jars. It makes the cake portable and portioned. It’s a super easy way to make everyone feel special. I used rounds of red striped wax paper on the top of the jars under the gasket but on top of the seal.

The utilizing my over abundance of arts and craft supplies, I cut out each persons first initial using my die-cut maker. I used a small block of self-adhesive scrapbooking paper in an effort to not have to mess with any glue. If you’d like to go the extra mile, you can also find a cute Valentine’s Day patterned ribbon and tie it around the top.
