It is said that America’s favorite dessert is apple pie, so if that’s the case then this cookie should become the new favorite of the nation. Apple Spice Cookies are here to take the lead! This cookie is filled with Granny Smith apples, cinnamon, ginger, and nutmeg. It is as close to the original pie as you can get in cookie form. Every bite hits all your flavor receptors; sweet, tart, spicy, and just plain delicious.
As a word of caution for these cookies, don’t add extra apples. The recipe calls for 1 Cup of chopped apples, and it should definitely be that exact amount. I would even venture to pre-bake the apple pieces just to draw some of the excess moisture out of the fruit. This step is completely optional. I did not use this technique for the cookies shown.

Apple Spice Cookies
1 Cup Packed Brown Sugar
1/2 Cup Butter, Softened
1 Egg
1 TSP Vanilla Paste
1 1/2 Cups All-Purpose Flour
1 TSP Ground Cinnamon
1 TSP Ground Nutmeg
1/4 TSP Ground Ginger
1/2 Tsp Baking Soda
1 Medium Aplpe, small diced (1 Cup)
Procedure
Heat the Oven to 375F. Line cookie sheets with parchment.
In the bowl of an electric mixer fitted with the flat beater, combine the sugar, butter, egg and Vanilla. Beat on medium-high speed until the mixture is light and fluffy.
In a separate bowl combine the dry ingredients. Reduce the speed to low and add the flour mixture, reserve 1/4 cup to toss with the apples. Turn off the mixer.
Add the flour coated apples, fold until fully incorporated.
Using a small cookie scoop, portion out the balls of dough onto the prepared cookie sheets. Space cookies about 2 inches apart.
Bake 10 -12 minutes, or until golden brown.
Transfer the cookies to a cooling rack.
