Homemade Vanilla Wafers are on the menu.
They are 10 times better than store bought and will work just as well in any recipe.
These homemade vanilla wafers are crunchy and filled to the brim with vanilla flavor. I use vanilla paste in all of my recipes, but if you wanted to use a vanilla bean, you may. It would take a whole bean scraped to give the same vanilla intensity.
I used the chocolate decorating pins to stripe the cookies in Christmas colors. You can also dust the cookies with sanding sugars before baking. This is another recipe that is fun to prepare with the kids. They can measure, mix, and decorate together. This recipe is sure to bring some holiday baking joy to your home.
Homemade Vanilla Wafers
1/2 Cup Butter, softened
1 Cup White Sugar
1 Egg
2 TBSP Vanilla Paste
1 1/3 Cup Sugar
3/4 TSP Baking Powder
1/4 TSP Salt
Chocolate Decorating Pens
Procedure:
Preheat the oven to 350 F
Cream together the butter, sugar, eggs, and vanilla in the bowl of an electric mixer fitted with the flat beater. Mix on medium-high speed until light and fluffy.
In a separate bowl, combine the dry ingredients. Reduce the speed to low and add in the flour mixture. Mix until fully combined.
Use a small cookie scoop, place portioned cookie dough on a cookie sheet spacing them inch apart.
Bake for 13-15 minutes or until golden brown around the edges and across the top.
Remove from oven and place on a cooling rack.
Once the cookies are cooled, place them close together on the cooling rack.
Warm the decorating pens in hot water until they are malleable and ready to use. Cut the tips off of the pen. And stripe the cookies with decorating chocolate.
Allow the chocolate to set and serve.
