Every region around the world has unique traditions and culinary delights. Italy is no different. Italian culture is one that is more closely associated with cuisine than just about any other. So when it comes to Christmas, why would it be any different?
In America we associate cookies with flat, crisp treats that offer the diner crunch and a little chew. In the UK cookies, or biscuits as they are called, can run the full range of textures and sizes. These cookies are part cake, part US cookie, and almost buttermilk biscuit-like. They are topped with a sweet glaze and sprinkles. This may be why they are referred to Italian sprinkle cookies.
I chose to flavor this version of the recipe with star anise. Star anise is a little more common in Asian cuisine, being of the ingredients in Chinese five-spice and pho broth. It is seen in several Italian recipes and it’s licorice flavor adds an unexpected element to the finished cookie. Be very cautious when incorporating anise into any recipe because it’s flavor can go from light and subtle to overwhelming in an instant.
This is a great way to experience holiday traditions from another culture. You can play Italian Christmas music, serve pasta loaded with seafood, and enjoy the lightly scented Christmas cookies with friends and family.
Anise-Flavored Italian Christmas Cookies
1/2 Cup Butter
2 TSP Vanilla Paste
3 1/2 Cups All-Purpose Flour
4 TSP Baking Powder
1/4 TSP Star Anise, Ground
Icing:
2 Cups Powdered Sugar, sifted
2 TSP Vanilla Paste
2 TBS Water
Procedure:
In a large bowl combine the flour, baking powder, and anise. Set Aside
In the bowl of an electric mixer fitted with the flat beater, beat the butter and sugar on high until light and fluffy.
Add the vanilla and the eggs, one at a time. Beat the mixture until it is light and smooth.
Add the flour mixture on low speed. Mix until it begins to come together.
Turn the dough out onto a lightly floured surface, knead until smooth and no longer sticky. Wrap in plastic and chill for 1 hour.
Remove the dough and pinch off small portions of dough. Roll the portioned dough into 6 inch strips.
Twirl the dough into little spirals and place on a line sheet pan.
Preheat the oven to 375 F
Bake 8 – 10 minutes or until lightly browned on the bottom but light across the top.
Transfer to a cooling rack and cool completely before icing.
Icing
Combine all ingredients until smooth.It should be slightly runny.
Dip the top of each cookie into the icing and place back onto the cooling rack
Top with sprinkle if you desire, while the icing is still wet
