These little buggers are crispy and delicious. They taste like they are fresh out of the deep-fryer, but guess what, they’re not!!! Fresh out of the oven and enriched with olive oil = heart healthy !
Crispy Oven-Fried (GF)
1 Cup Sorghum Flour
1 Cup Tapioca Flour
1 Tbsp. Kosher Salt
1 Tbsp. Black Pepper
1 Tbsp. Smoked Paprika
1 Tbsp. Garlic Powder
5 Eggs
2 Lbs. Chicken breasts, boneless skinless, cut into 1-inch strips
Olive Oil Mister filled
Procedure:
- Combine all the spices and mix well. In a separate bowl or shallow dish mix the flours.
- Season the flour mixture with half the spices. Blend well.
- In another shallow dish whisk together the eggs and remaining spices.
- Line a large cookie sheet aluminum foil. Place a wire rack over the sheet and spray it with olive oil.
- Dredge the chicken first in flour then in the egg wash. Then dredge the pieces once more in the flour.
- Place the prepared pieces on the wire rack. Once all the pieces are done chill for 25 mins to set the coating.
- Spray the chilled chicken pieces with olive oil and bake in a 450 degree oven for 25 mins. Turn them once halfway through.
- Then drop the temperature to 375 F and bake another 10 minutes.
- Remove from oven and let sit for 5 minutes.
