These little buggers are crispy and delicious. They taste like they are fresh out of the deep-fryer, but guess what, they’re not!!! Fresh out of the oven and enriched with olive oil = heart healthy !

Crispy Oven-Fried (GF)

1 Cup Sorghum Flour

1 Cup Tapioca Flour

1 Tbsp. Kosher Salt

1 Tbsp. Black Pepper

1 Tbsp. Smoked Paprika

1 Tbsp. Garlic Powder

5 Eggs

2 Lbs. Chicken breasts, boneless skinless, cut into 1-inch strips

Olive Oil Mister filled

Procedure:

  1. Combine all the spices and mix well. In a separate bowl or shallow dish mix the flours.
  2. Season the flour mixture with half the spices. Blend well.
  3. In another shallow dish whisk together the eggs and remaining spices.
  4. Line a large cookie sheet aluminum foil. Place a wire rack over the sheet and spray it with olive oil.
  5. Dredge the chicken first in flour then in the egg wash. Then dredge the pieces once more in the flour.
  6. Place the prepared pieces on the wire rack. Once all the pieces are done chill for 25 mins to set the coating.
  7. Spray the chilled chicken pieces with olive oil and bake in a 450 degree oven for 25 mins. Turn them once halfway through.
  8. Then drop the temperature to 375 F and bake another 10 minutes.
  9. Remove from oven and let sit for 5 minutes.
