Everyone loves a good cookie, especially when you are talking about the classic, chocolate chip! Why try to recreate the wheel? So many have tried, some work and some don’t.  I didn’t deviate too far from the original formula.

My version of the classic simply adds one ingredient to enhance the cookie as a whole, French Grey Sea Salt!!! People have a tendency to look at salt as a savory ingredient, but it simply isn’t the case. Think about the reasons we add salt to food. It heightens flavor and enhances the overall dish. So, why not let it work its magic in something sweet?

In sweet dishes, like this cookie recipe, it gives your palette a break from the sweetness. This break allows you to experience all the flavors just a little better. The chocolate chips really sing, and they will make your mouth fall in love with the cookie again and again.

Classic Chocolate Chip Cookie with French Grey Sea Salt

2 1/4 Cup All-Purpose flour
1 Tsp Kosher Salt
1/2 TSP Baking Soda
1 Cup (1 stick) unsalted butter, softened
1 1/4 Cup packed light brown Sugar
1/4 Cup Granulated sugar
2 Large eggs
1 TSP Vanilla Paste
2 Cups Milk Chocolate Chip
1 TSP Fine French Grey Sea Salt

 Procedure:

Preheat the Oven to 350F. Combine the flour, salt, and baking soda in a bowl.

Using an electric mixer, beat the sugars and butter together on medium-high until light and fluffy. Incorporate the eggs, one at a time, and the vanilla.

Reduce the speed to low and add in the flour mixture (reserve 1/4 cup of flour). Only mix until combined and then turn off the mixer.

Toss the chocolate chips in the reserved flour and fold into the batter.

***** The flour coating on the chocolate chips actually gives the batter something to cling to as it bakes. This will prevent all of the chocolate chips from sinking to the bottom of the cookie.

Using a cookie scoop warmed in hot water, scoop cookies onto lined sheet pans, leaving 2 inches around each. Using the bottom of a metal measuring cup, also dipped in the hot water, lightly press down the top of each scoop. Sprinkle a very small amount of French grey sea salt on top of each cookie.

****** The water keeps the batter from sticking to the scoop and the measuring cup. Just keep on dipping each in the warm water.

Place in the oven for 12 – 15 minutes, rotate the pans halfway through cooking. When the cookies are golden brown around the edges and the top, they are done.

Remove from oven and cool cookies on a cooling rack.
